You may be wondering...what are Daniel Fast meals? I'm so glad you asked! The Daniel Fast is a partial fast based on the man named Daniel we know from the Bible.

If you've read the book of Daniel, you probably remember that he was chosen to be of service to King Nebuchadnezzar. As part of the assignment, Daniel would be able to eat and drink from the king's table.
As Daniel preferred to eat a healthier diet, he asked to be excused from partaking in the rich food and wine, so he could eat his preferred vegetables and drink only water.

At first, the chief official was not having it, saying the king would not be happy if Daniel didn't look as well-fed as the rest of the group. Daniel asked to be given ten days eating this way so the official could see the benefits.
The official agreed, and after ten days, Daniel and his three friends looked healthier and better nourished than any of the young men who ate the royal food.
My husband and I started participating in the Daniel Fast about ten years ago. We would begin the year with the fast as a way of cleansing our bodies of all the processed foods, meat, dairy, and sugar. Now we use many of those recipes all year long.
The reason I started Daniel Fast Meals is that I had a hard time finding delicious things to eat while on the fast!
I hope you'll agree that the recipes you find here are not only extremely healthy, but they taste really great, as well.

Full disclosure: I am not vegan. I eat a wide variety of foods on a regular basis. But I find that taking time a few times a year to eat this way makes me feel better physically.
